Banana Bread
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- one stick (1/2 cup) unsalted stick of butter, melted
- 2 eggs
- 1 tsp. vanilla extract
- 1 1/2 cups all purpose flour
- 1 tsp. baking soda
- sprinkle or 2 of salt
- a few sprinkles of cinnamon
- 1/2 cup sour cream (or full fat yogurt)
- 2 or 3 bananas, mashed
- Whatever add-ins you want...chocolate chips, any kind of nut, coconut, any other kind of spice you think would taste good.
- Grease a loaf bread pan or a bundt pan. Pre-heat the oven to 350 degrees.
- Melt the butter first, remove from heat and let it cool for a bit. If you add it in with the eggs while it is hot, the eggs will start to cook.
- While the butter is cooling, in a large bowl add everything. Stir lightly, then add the butter.
- Combine everything but don't mix too much. It is ok if there are a few lumps, with bread you don't want to over mix.
- Pour into the pan and put into the oven.
- It needs to bake for about 45 minutes to an hour. Start checking around the 40 minute mark. Once it is browned on top and the toothpick comes out mostly clean from the center, minus a few crumbs.
- This is amazing fresh out of the oven with a pat of butter on top. You can also spread some peanut butter on top while it is warm or at room temperature. Another suggestion would be to turn it into cinnamon sugar toast. While it is warm or after you have toasted it, spread butter and then sprinkle cinnamon sugar on top.
