Buckeye Pie
We just had the National Championship (Buckeyes vs. Notre Dame) and of course, we won. For the event I made Buckeye Pie. It is just how is sounds...it is basically taking a buckeye and turning it into a pie. If you love chocolate and PB together, read on.
Crust
- 22 regular Oreo cookies
- 5 tablespoons of butter (you can use salted or unsalted-if you are using unsalted, add a few sprinkles of salt.)
- Melt the butter slowly over a low-medium heat.
- While the butter is melting, grind up the Oreos. You can either do a more old school way by placing the cookies into a bag and pound them with a hammer or rolling pin or use a blender. I have a Ninja blender that works great.
- Once the cookies have been ground up, add the melted butter and mix.
- Once it has been combined, pour it into an ungreased pie plate. Take your (clean) hands and press the crust all over the bottom and up the sides.
- You can either stop here or put the crust into the oven at 350 degrees for about 10 minutes. Pull out and cool before adding any filling.
Filling
- 1 cup of peanut butter (Any kind of PB is fine, chunky or smooth. Doesn't matter.)
- 8 oz. of softened cream cheese
- maple syrup (Start with a 1/2 cup and add more depending on how sweet you want it to be. I usually do about 3/4 cup.)
- A splash of vanilla extract
Grab a large bowl and mix everything until it is all combined and smooth. Pour into the crust and smooth it out making sure it is reaching the edge. Top with the toppings you want to use. See below.
Toppings (These are just some ideas, you can use any kind of toppings you think will taste good.)
- Chocolate syrup
- Chocolate chips
- Crushed up Oreos
- Chopped up buckeyes
