Chai Tea Cookies (Allison's Version)

This recipe is inspired by Taylor Swift's cookie recipe. These are great any time of the year but I feel they are perfect for the Autumn/Winter seasons. Make sure you listen to 'Cardigan' while baking these.

  • 1 cup of butter at room temperature (two sticks)
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 egg
  • 2-5 bags of Chai Tea (I personally like for these to be very spicy but it is up to you. Go less or more depending on how Chai-y you want them to be.)
  • 2 tsp. vanilla extract
  • 2 cups all purpose flour
  • 3/4 tsp. baking soda
  • sprinkle of salt
  • a couple sprinkles of black pepper
  • cinnamon sugar for rolling
  • Glaze...1 1/2 cups powdered sugar, 1/4 tsp. cinnamon or nutmeg and 3 tablespoons milk or cream.
  • When the cookies are iced, feel free to sprinkle a spice on top. Either cinnamon, nutmeg, cloves...ect...you choose!

  1. In a large bowl, beat the sticks of butter for a couple of minutes until smooth.
  2. Add the sugars and the tea. When I say the tea, I do mean the actual tea. Grab a pair of scissors and cut open the tea bags and pour the tea leaves/spice directly into the mixture. Mix again.
  3. Add the egg and vanilla extract. Mix again for another minute.
  4. Then mix in the flour, salt, pepper and baking soda. Put the dough into the fridge for 2 hours, overnight or into the freezer for about 20 minutes if you are crunched on time.
  5. Pre-heat the oven to 350 degrees. Pull the dough out and let it sit for a little bit so it is easier to handle.
  6. Roll the dough into balls, I'd say the size should be about a tablespoon/tablespoon and a half. Roll the balls into cinnamon sugar and place on a cookie sheet.
  7. Make sure the cookie sheet has parchment paper on it or use silpat. I was able to get about 8 cookies on the sheet with enough space in between.
  8. Bake for about 12-14 minutes, maybe even 8-10 minutes depending on how hot your oven gets. Pull them out and let them cool completely.
  9. You can either be done and eat them as is or mix up a glaze for the top.
  10. For the glaze...mix all of the ingredients together into a bowl until smooth. You can either drizzle the glaze on top or dunk the cookies directly into the glaze.
  11. Then sprinkle a spice on top. I like to switch this up. Sometimes I do cinnamon, sometimes I do cloves or cardamom. Have fun with the sprinkling!
