Cottage Cheese Noodles with Kielbasa (Polish Noodles)
- 1/2 cup butter (1 stick)
- chopped onion (The amount depends on how much you like or don't like onion. I personally love onion so I chop a lot. If you don't love onion, chop accordingly.)
- 1 16 oz. package wavy egg noodles
- 1 16 oz. container cottage cheese
- 1/2 cup heaping full fat sour cream
- a couple sprinkles of salt
- a good amount of black pepper
- 12 oz. Polska Kielbasa sausage, sliced
- Slice up the sausage and put into a saucepan with some oil or butter (I actually add both to the pan) and fry up the slices. Do your best to flip each piece over so both sides heat through.
- Reminder with the sausage...it is already cooked so it doesn't really need to be cooked as much as just heated through.
- In another pot or saucepan, add the stick of butter and chopped onion over medium heat. The stick of butter needs to melt all the way and the onion needs to cook for about 7 to 10 minutes.
- Meanwhile, grab a large pot and add enough water to cover the noodles. Add a couple sprinkles of salt to the water too. Bring the water to a boil, add the noodles and cook until just under al dente. Just under will taste like it is almost done but not quite.
- Drain the noodles then put them back into the pot. Add the butter and onions, then add the cottage cheese, sour cream, salt and pepper. Mix everything together.
- Add the sausage then mix one more time. Turn the burner on again and cook for just a little bit longer so it all warms up and the cheese softens a little. This will feed a little crowd, about 8 servings.
