Easy Cornbread Cookies
These are good for people who aren't into sweets that are super rich, doughy, fudgey or half baked. These are simple, toasty and can be whipped up quickly. They are great with a glass of cold milk or a hot mug of tea or coffee.
- 1 box of Jiffy corn muffin mix (8.5 oz.)
- 4 tablespoons of softened butter
- 2 egg yolks at room temperature
- 1/4 cup granulated sugar
- Pre-heat the oven to 350 degrees.
- Mix all of the ingredients into a large bowl until a thick dough forms.
- Grab a spoon or cookie scoop. Something that is standard, about 1-2 tablespoons.
- Scoop the dough and place onto a cookie sheet. Make sure the sheet has parchment paper on it or silpat.
- Bake for about 10-12 minutes. They are done with the edges are toasty and light brown.
