Homemade Soft Tortilla Shells
- 3 cups all purpose flour
- 1 tsp. salt (I personally like to add more, up to you though!)
- 1 tsp. baking powder
- 1/3 cup extra virgin olive oil or any other neutral oil
- 1 cup warm water
- Combine flour, salt and baking powder in a mixing bowl. Mix until combined.
- Make a well in the center of dry ingredients. Add the oil and water. Stir from the bottom up until everything is mixed and a slightly shaggy ball is formed.
- Knead ball for 1-2 minutes until smooth. Divide into 16 (ish, might be a little more or less) equal portions.
- Coat each piece with flour. Flatten each ball slightly. Place these on a cookie sheet and cover with a clean towel. Let them rest for about 15 minutes or 2 hours.
- Heat a large pan or skillet. You don't have to add any butter or oil to the pan, it just needs to be fairly hot. Take a ball of dough and try to flatten it as much as possible. Either using your hands or a rolling pin (everything covered in flour to it doesn't stick).
- Once they are flat, put it in the hot pan. Cook on each side. Flip with tongs or your fingers if you are brave. Start with a couple or 3 minutes on each side but the hotter the pan gets, the shorter it takes to cook these.
- Each side should have a few brown spots, that is a good indicator of when they are done.
- To keep these warm, you can put them on a cookie sheet in the oven on a low degree. These make about 16, maybe a little more or less.
