Loaded Banana Bread
- 1/2 cup granulated sugar
- 1/2 cup brown sugar (dark or light will work)
- 3 mashed very ripe bananas (maybe 2 if the bananas are huge)
- 1/2 cup (1 stick) melted butter
- 2 eggs
- 1 tsp. vanilla extract
- 1 tsp. baking soda
- 1/2 teaspoon salt
- 1/2 cup full fat sour cream
- 1 1/2 cups all purpose flour
- 1/4 - 1/2 cup of semi-sweet or dark chocolate (chips or chunks), shredded coconut and walnuts.
- Pre-heat oven to 350 degrees. Grease a bundt or loaf pan.
- Melt the stick of butter first then remove from heat and let it cool for a few minutes.
- Grab a large bowl and mix everything together. Add the melted butter last, mix again.
- Mix until everything is combined but don't mix too much, a few lumps are ok.
- Pour the batter into the greased pan and put into the oven. It will need to bake anywhere from 40 minutes to an hour. My oven gets very hot so it doesn't take as long for me but stay close by and keep checking.
- Grab a toothpick or knife and check the center. Once it comes out clean with maybe a few crumbs, it is done.
- Remove from the oven and let cool. It is great at room temperature or when it is still warm, spread a pat of butter on top!
