My Favorite Cornbread
- 2 boxes of Jiffy Corn Muffin Mix
- 2 eggs
- 2/3 cup of whole milk (you can use other milk if you want, I prefer whole.)
- 1 cup sour cream (or Greek Yogurt)
- 1 stick of butter, melted
- 2 tablespoons sugar (I personally don't add this. If you want to, go for it.)
- Pre-heat your oven to 400 degrees. Grease a 9 x 9 dish.
- In a bowl, add the Jiffy mixes, eggs, milk, sour cream, butter and the sugar if you are choosing to add it. Mix everything together.
- You don't want to mix too much, it is ok if there are a few lumps.
- Pour into the 9 x 9 dish. Put into oven and bake for 25-30 minutes.
- Keep checking it by putting a toothpick or a knife in the center, it is done once the tester comes out clean, minus a few crumbs.
- Double the recipe if you have a bigger crowd you are feeding. Use a 13 x 9 pan.
