My Favorite Cornbread

  • 2 boxes of Jiffy Corn Muffin Mix
  • 2 eggs
  • 2/3 cup of whole milk (you can use other milk if you want, I prefer whole.)
  • 1 cup sour cream (or Greek Yogurt)
  • 1 stick of butter, melted
  • 2 tablespoons sugar (I personally don't add this. If you want to, go for it.)
  1. Pre-heat your oven to 400 degrees. Grease a 9 x 9 dish.
  2. In a bowl, add the Jiffy mixes, eggs, milk, sour cream, butter and the sugar if you are choosing to add it. Mix everything together.
  3. You don't want to mix too much, it is ok if there are a few lumps.
  4. Pour into the 9 x 9 dish. Put into oven and bake for 25-30 minutes.
  5. Keep checking it by putting a toothpick or a knife in the center, it is done once the tester comes out clean, minus a few crumbs.
  6. Double the recipe if you have a bigger crowd you are feeding. Use a 13 x 9 pan.
