Not Mashed Guacamole
I love avocado. I eat it plain. I like cutting it up with some olive oil and salt on top. I personally never became obsessed with avocado toast like the rest of the world did but I'll still eat it. I especially love this recipe. It is guacamole but the only difference is that I don't mash up the avocados. I like to chop, dice or cube everything. The only utensil I usually use to eat this is a tortilla chip but sometimes I'll just grab a fork and go to town. The recipe below will be for just you. If you are going to make this for a crowd, up the ingredients by double or triple.
- 1 large or 2 small/medium ripe avocados
- 1 jalapeno. The heat is in the seeds so it is up to you as to whether you want to remove them or not.
- 1-2 tomatoes depending on size. I usually do 1 Roma Tomato but any kind will do.
- A lot of fresh chopped cilantro. I love fresh cilantro so I chop up a lot but it is up to you.
- Chopped yellow or white onion. About half of a small or medium onion.
- 1-2 cloves of chopped garlic. I also like to add a sprinkle or two of powdered garlic from the spice cabinet.
- The juice from half of a lime. Use the other half for another batch!
- A generous sprinkling of salt.
- I sometimes will add other spices. At times I'll add something hot like chili powder or cayenne. You do you though. These can be omitted.
- Your favorite tortilla chips.
Chop what needs to be chopped, sprinkle what needs to be sprinkled and juice half of the lime into a bowl. Give it a good stir a few times. Grab some tortilla chips or a fork and enjoy.
