Oatmeal Cookies with PB Chips
- 1 cup all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 3/4 cup (1 1/2 sticks) unsalted butter, softened
- 3/4 cup firmly packed dark brown sugar (I prefer dark but light is ok too.)
- 1/2 cup granulated sugar
- 1 large egg at room temperature
- a few splashes of vanilla extract
- 2 1/2 cups quick cooking oats (not regular or old fashioned)
- 1 heaping cup of Peanut Butter chips
- Pre-heat oven to 350 degrees.
- In a small bowl, mix the flour, baking soda, salt and cinnamon. Set aside for now.
- Grab a larger bowl and cream the butter with both of the sugars until combined and smooth. Cream for about 2 minutes.
- Add the egg and vanilla. Mix again for another minute.
- Add the dry ingredients, mix again. Then add the oats and chips, mix one last time to make sure everything is mixed and a dough forms.
- Using a teaspoon or small cookie scoop, scoop the dough and drop onto an ungreased cookie sheet with parchment paper or onto a sheet of silpat. Leave a few inches in between the cookies, they will spread.
- Bake for 11-13 minutes. Remove from the oven and let cool on the sheet for a minute or two, then remove and place onto a wire rack to completely cool.
- You don't have to do this but I will usually put the dough into the fridge in between baking the cookies so the butter in the dough stays more on the cold side. The cookies will still have a slight crisp but they won't get too crunchy if the dough is cold.
