Pistachio Cake
Cake
- 1 box yellow cake mix
- 1 (3.4 oz.) box of pistachio pudding mix
- 3 eggs
- 1 cup lemon lime pop (You can use Sprite or Mountain Dew)
- 1 cup butter, melted (2 sticks)
- Few drops of green food coloring (I usually don't add this but if you are really wanting a pop of green, go for it.)
Frosting
- 1 (3.4 oz) box of pistachio pudding mix
- 2 cups heavy whipping cream
- Same as above, feel free to add a few drops of green coloring but it is optional.
- Pre-heat the oven to 350 degrees. Spray or grease a 13 x 9 pan.
- In a large bowl, mix all of the cake ingredients until fully combined.
- Pour the batter into the pan. Bake for about 25-35 minutes.
- Around the 25 minute mark, stay close by and using a toothpick, keep checking until the center of the cake is done.
- Pull cake out and let it cool completely. The cake needs to be cool before adding the frosting.
- For the frosting...in another bowl add the cream and beat heavily until semi-stiff peaks form. Add the box of pudding mix and slowly fold everything together. Don't be aggressive with the mixing for this part, just gently fold in until mixed.
- Pour over the cake and spread so the entire cake is covered. This should be kept in the fridge but can be out for a couple of hours.
