Pound Cake
- 1 tsp. vanilla extract
- 3 eggs
- 1/4 tsp. baking soda
- 1/2 cup sour cream
- 1 1/2 cups granulated sugar
- 1 cup room temperature butter (2 sticks)
- 1 1/2 cups all purpose flour
- Pre-heat the oven to 350 degrees.
- In a large mixing bowl, cream the butter and sugar. Cream for about 2-3 minutes. Add the sour cream, mix for another minute.
- In another bowl, sift the baking soda and flour.
- With the flour mixture and eggs, alternate adding to the creamed mixture. Add 1/3 of the flour, mix. Then add an egg, mix. So on and so on until the flour mixture and eggs are gone and mixed in.
- Add the vanilla and mix one more time. Pour the batter into a greased loaf pan or tube pan. Bake for 40 minutes to an hour.
- Stay close by and keep checking, keep doing the toothpick test. Once the toothpick comes out clean, minus a few crumbs, it is done.
- Pull out and let it cool. Pound cake is very versatile! You can eat it plain or add whatever you want. Fruit, any kind of chocolate, whipped cream, whipped cream and fruit...make it your own.
