Pumpkin Bread

  • 1 3/4 cups all purpose flour
  • 1 tsp. baking soda
  • 2 tsp. cinnamon (For the following spices, I personally like a spicy bread but it is up to you. You can do more or less of each one.)
  • 1/4 tsp. or 1/2 tsp. nutmeg
  • 1/4 tsp. or 1/2 tsp. ground cloves
  • 1/4 tsp. or 1/2 tsp. ground ginger
  • a couple sprinkles of salt
  • 2 large eggs at room temperature
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar (I use dark but light is fine too.)
  • 1 1/2 cups pumpkin puree
  • 1/2 cup melted butter (1 stick)
  • The juice from half of an orange

  1. Pre-heat the oven to 350 degrees.
  2. Grease a loaf pan. In a large bowl whisk or stir together the flour, baking soda, spices and salt.
  3. In a separate bowl, whisk or beat the eggs, granulated sugar and brown sugar.
  4. Add the pumpkin, butter and juice. Stir again to combine.
  5. Add the dry ingredients to the wet. Gently fold everything together until it is all combined. You don't want to mix too much, a few lumps is totally fine.
  6. Pour into the loaf pan. Put into the oven and bake for around 45 minutes to an hour.
  7. Keep checking using a thin utensil. Once the middle comes out dry minus a few crumbs, it is done. Pull it out to cool.
  8. It is excellent fresh out of the oven with a pat of butter. Or a pat of butter with some cinnamon sugar sprinkled on top. It is also really good at room temperature too. Obviously perfect for the Autumn season.
