Pumpkin Bread
- 1 3/4 cups all purpose flour
- 1 tsp. baking soda
- 2 tsp. cinnamon (For the following spices, I personally like a spicy bread but it is up to you. You can do more or less of each one.)
- 1/4 tsp. or 1/2 tsp. nutmeg
- 1/4 tsp. or 1/2 tsp. ground cloves
- 1/4 tsp. or 1/2 tsp. ground ginger
- a couple sprinkles of salt
- 2 large eggs at room temperature
- 1/2 cup granulated sugar
- 3/4 cup brown sugar (I use dark but light is fine too.)
- 1 1/2 cups pumpkin puree
- 1/2 cup melted butter (1 stick)
- The juice from half of an orange
- Pre-heat the oven to 350 degrees.
- Grease a loaf pan. In a large bowl whisk or stir together the flour, baking soda, spices and salt.
- In a separate bowl, whisk or beat the eggs, granulated sugar and brown sugar.
- Add the pumpkin, butter and juice. Stir again to combine.
- Add the dry ingredients to the wet. Gently fold everything together until it is all combined. You don't want to mix too much, a few lumps is totally fine.
- Pour into the loaf pan. Put into the oven and bake for around 45 minutes to an hour.
- Keep checking using a thin utensil. Once the middle comes out dry minus a few crumbs, it is done. Pull it out to cool.
- It is excellent fresh out of the oven with a pat of butter. Or a pat of butter with some cinnamon sugar sprinkled on top. It is also really good at room temperature too. Obviously perfect for the Autumn season.
