Ted Lasso "Biscuits"
- 1 cup unsalted butter, softened (2 sticks)
- 2/3 cup granulated sugar, extra for topping
- 1 tsp. vanilla extract
- 1 tsp. almond extract
- sprinkle of salt
- 2 cups all purpose flour
- Pre-heat the oven to 325 degrees. Make sure the rack is in the middle.
- Using an 8 x 8 pan, make sure it is greased or use parchment paper.
- Mix butter, sugar, the extracts and salt. Mix fully until combined, about 2 minutes. Add flour and mix. Just mix until it is combined, you don't want to over mix.
- Put dough in pan. Press down with your fingers making sure the dough reaches the entire bottom and sides. Take a fork and prick all over.
- Put in the fridge for 30 minutes or the freezer for 15 minutes.
- Bake for about 30 minutes, edges should be golden brown. Sprinkle with granulated sugar when they are still hot from the oven so the sugar sticks.
- Let them cool before serving. Although, I think these are good either way. Warm or room temperature.
