What To Do When You Have Extra Pie Crust

Around Thanksgiving and Christmas (when an abundance of pies are being made) my Dad never wasted anything. So when there was extra pie crust dough, he would always roll it out and make these little crispy/doughy cinnamon twists/rolls. A lot like a cinnamon roll just way smaller and no icing. They are really good and easy to make. Easy to eat too.

  • Leftover pie crust dough (I have a recipe for pie crust!)
  • Some softened butter (enough to spread over the crust, whatever this looks like. Maybe 2 tablespoons.)
  • A decent amount of cinnamon (same as the butter...there needs to be enough cinnamon to sprinkle over the butter. Maybe a couple tablespoons.)
  • This is optional but you can also sprinkle granulated sugar, brown sugar or both on top of the cinnamon. You can also just stop at the cinnamon if you want.

  1. These don't take long to bake so the oven just needs to be at anything between 325 or 350 degrees.
  2. Grab a rolling pin and dust some flour or powdered sugar on it. Dust the work space as well.
  3. Roll out the dough to a rough rectangle or rounded square.
  4. Take a butter knife and spread the butter all over, edge to edge, top to bottom. Do the same thing with cinnamon. Sprinkle it all over to cover the butter.
  5. You can now stop with the cinnamon or sprinkle the optional things I suggested above on top of the cinnamon.
  6. Next you will start at the end close to you. Take your fingers and roll up the dough until it is completely rolled to a dough log.
  7. Using a knife going across the roll, slice through the dough and then place the swirls onto a cookie sheet with parchment or silpat. With these being small you should be able to fit most onto the sheet, you might have to bake in a couple of batches though if you run out of room. They spread a little so give them a little space in between on the sheet.
  8. For baking time I honestly don't have a definite answer because I just stay close by and check them every few minutes. It also depends on how crispy you want them to be. These probably need to bake anywhere between 10-15 minutes.
  9. Pull them out to cool. They are great warm from the oven but also good at room temperature too!
